SOMMELIER'S COMMENTS

A beautiful purple to garnet colour.

A liquorice nose worthy of a great wine from the appellations we all know.

Full-bodied on the palate, with lovely fruit notes.

Pleasant ageing that makes the wine lively.

A wish for a daily drink (in moderation of course).
It still has many good years ahead of it.

This could be the wine for friends, for sharing a nice meal.

It's a perfect accompaniment to dishes with tomato or cream sauce, or simmered dishes. The classics of French gastronomy.

2018 – Côtes de Bordeaux HÉDONÉ

SOMMELIER'S COMMENTS

After 15 minutes decanting, this fine cuvée reveals a full-bodied palate and very supple tannins.

Notes of black fruit, slightly jammy, give this Merlot-dominant vintage exceptional ageing potential.

SOMMELIER'S COMMENTS

Somehow more reduced, a more subtle nose than 2017, with, it seems, more presence for the Cabernet Franc.

It shows great potential in the light of the 2017 cuvée, with a clearer aromatic complexity.

A great match for stewed dishes with a tomato or other juicy vegetable base.

2019 – Côtes de Bordeaux Barrel

SOMMELIER'S COMMENTS

A perfect harmony of fruit, freshness and silky tannins. A nose reminding of red fruit, the palate offers a straightforward part with no false pretence. A supple, easy-drinking Bordeaux to accompany the most convivial of meals. Red meat, offal, stews, etc.

PAZ LEVISON – APRIL 2021 TASTING

Colour: Light ruby, brilliant, red with a violet edge. The wine is of average concentration and the legs are colourful.
Nose: The first nose is spicy, with aromas of cinnamon, nutmeg and cloves. The fruit is ripe and precise, with mainly black fruit like blackcurrant and bilberry. The aromas are lovely, with creamy notes mixed with pink pepper.
Palate: The wine is dry, with moderate but well-balanced acidity. The alcohol is slightly high, but integrated, and the tannins are polished and refined. The finish is fruity and floral, with moderate length.
Meals: Stuffed ravioli with bolognese sauce.
Comment: A juicy red wine to be drunk young, produced using biodynamic viticulture.
Ageing: 2021-2025.
Score: 91/100

SOMMELIER'S COMMENTS

A fine wine for a fine Michelin-starred table.

The ageing is discreet and the tannins supple, almost silky.

It goes well with mildly spicy, oriental dishes, game and even a nice cheese platter.
